Distinctive Features : Asti DOCG is a classic Piedmontese sparkling party wine. It’s the perfect dessert wine that accompanies fruit salads and any type of after-meal. Vinification: The harvested grapes are de-stemmed and subjected to a soft pressing process. The must obtained is cooled to 0 ° C and stored in cold rooms for up to one month before the second sparkling fermentation. The wine reaches 7% alcohol by volume after a slow fermentation in an autoclave before bottling . In recent years Asti DOCG has reached excellent quality levels thanks to the use of cold processing techniques, which have allowed all the aromatic characteristics of the wine to be kept intact.
