Distinctive Features: Gavi's Gavi DOCG is pleasantly tasted in informal meals, it boasts a fresh and floral nose of good intensity and persistence. On the palate it is dry with an almond aftertaste
Vinification: The Cortese grapes produced in area of Gavi are carefully selected, in order to then be stemmed and crushed; the must obtained undergoes a soft pressing, before being subjected to a fermentation process at a controlled temperature. The aging takes place in stainless steel tanks on yeasts.
Grape Type: The Cortese grape , typical of the eastern areas of Piedmont , is much larger than a usual grape , and has a thin skin and a golden colour. The high acidity and low alcohol content determine the production of clear and pleasant wines, drinkable at any time of the day.
Territory: In the area surrounding Gavi, the Cortese wine has the greatest prestige. The grainy soils have a very high number of fossils deriving from the retraction of the "Padano sea", and these even minor geological differences between one plot and another are perceptible both to the nose and to the palate.
