Vinification: The Pinot and Chardonnay grapes, harvested at the beginning of September, are treated by soft pressing, before being fermented at a controlled temperature of about 15 ° - 16 ° C. In spring, the cuvée obtained from the combination of the various wines, is bottled and subjected to a second fermentation for a minimum of thirty-six months on its own fermentation lees.

The combination of these two grapes produces a distinctive, structured, harmonious and ethereal bubble in this type of wine.
