Founded in the 90s in Savigny-les-Beaune, Domaine Jean-Jacques Girard owns over 15 hectares of vineyards spread across several communes, where they grow Chardonnay, Pinot Noir, and Aligoté grapes. Since 2009, Jean-Jacques has been supported by his son Vincent in managing the estate. The Pinot Noir grapes for this elegant Savigny-les-Beaune 1er Cru Les Serpentières are selected from the Cru of the same name, whose name is linked to the high presence of snakes in the past, due to the many water sources. Sustainable agriculture is practiced in the vineyard with limited use of fertilizers to maintain the health and balance of the soil and control yields. As for all the Premier Cru of the company, Les Serpentières also ages for about 15 months in oak barrels. In the glass, the wine reveals a bright color, with cherry red tones and an intense and broad aromatic profile with notes of small red berries, cassis, and maraschino cherries, followed by woody hints of undergrowth and licorice. On the palate, it is fresh and lively, juicy and round with a marked refreshing acidity and velvety tannins. The finish is long, elegant, and persistent. It is excellent in the traditional local pairing with beef Bourguignon, but it also goes well with game and medium-aged cheeses.
