Drink it now or cellar for up to 20 years. It is recommended to decant it for an hour. Domaine Pavelot is a family winery in Burgundy managed today by Jean-Marc and his son Hugues. The company, located in Savigny-lès-Beaune, in the heart of the Côte de Beaune, extends over approximately 13 hectares of vineyards characterized by a strong geological and topographical diversity that is revealed in the typicity of their wines, which fully express the uniqueness of the Burgundy terroir. The Pinot Noir grapes are harvested by hand from the Cru Aux Gravains located in the alluvial fan of the Combe d'Orange streams on low slopes. Here the vines, some 80 years old and others 40 years old, rest on a soil with mixed sediments and gravel (hence the name of the cru). After fermentation, the wine rests in oak barrels (1/4 of which are new) for 1 year. Savigny les Beaune Premier Cru Aux Gravains has an intense and brilliant color with carmine tones and garnet nuances. On the nose, it reveals intense aromas of ripe black fruits and spices. On the palate, it is deep and concentrated with velvety tannins and a long finish that recalls balsamic notes. Keep it in the cellar for a few years, or enjoy it now with a game stew.
