Located in the Côte de Beaune in Burgundy, Domaine Jean-Marc and Hugues Pavelot is a family winery that has been passed down from father to son for generations. The property comprises approximately 13 hectares of vines, planted with Pinot Noir and Chardonnay, and spread across Savigny-les-Beaune, Beaune, and Aloxe-Corton. Production includes a dozen wines from different appellations that wonderfully represent the diversity of Burgundy's terroirs. Savigny les Beaune Premier Cru Aux Guettes is a Pinot Noir produced with grapes from a privileged site, which benefits from a good altitude (around 300 meters) and a southern exposure. The 35-year-old vines are rooted in shallow limestone soils on a steep slope. After vinification, the finished wine rests in oak barrels (25% new) for 1 year. In the glass, the wine reveals a deep and intense color with dark red tones and a broad and fragrant aromatic profile with notes of dark fruits and dried flowers followed by light spicy hints. On the palate, it is lively, juicy, fresh, and harmoniously fruity. It has a medium body and velvety tannins. It is a very expressive wine, which can remain in the cellar for a couple of decades but is also very approachable in its youth. Try it with game birds, roast duck, or Coq au Vin.
