Domaine Jean-Marc and Hugues Pavelot is a family-run Burgundy winery, passed down from generation to generation, that owns approximately 13 hectares of vineyards spread across several appellations in the communes of Savigny-Les-Beaune, Aloxe-Corton, and Beaune. The Pinot Noir grapes are selected from the Premier Cru La Dominade vineyard (from the latin word ‘dominus’) located on a gentle slope between Les Marconnets and Les Jarrons 1er cru. The vines of various ages (80, 40, and 10 years) sink their roots into a clayey soil rich in sand. After vinification, the finished wine rests in oak barrels (30% new) for 12 months. Savigny les Beaune Premier Cru La Dominode is a powerful and characterful wine with a deep garnet red color. On the nose, it reveals a broad and complex aromatic profile with ripe red fruits, sweet spices, and hints of undergrowth and moss. On the palate, it is full-bodied and concentrated, fleshy and round with velvety tannins and a very long and smooth finish that recalls spicy notes. It is a wine that shows excellent aging potential but is already enjoyable now. Try it with wild boar fillet or beef stew.
