Drink it now or cellar for up to 20 years. It is recommended to decant it for half an hour. Located in the commune of Savigny-lès-Beaune in Burgundy, the estate of Jean-Marc and Hugues Pavelot covers approximately 13 hectares of vineyards that also include plots in Aloxe-Corton and Beaune and are planted with Pinot Noir and Chardonnay grapes. Their elegant wines are characterized by the great geological and topographical diversity of the vineyards located between 220 and 360 meters above sea level. The estate, passed down from generation to generation, practices manual harvests and aging in oak barrels. The Pinot Noir grapes are selected from vines of about 50 years of age from the lower slopes where the soil is mainly calcareous with thin and flat rocks in the subsoil (hence the name of the cru Les Lavieres), a characteristic that ensures excellent drainage of the soil. After vinification, the wine rests for 12 months in barrels (of which 1/4 new). Savigny les Beaune Premier Cru Les Lavieres has an elegant and broad aromatic profile with notes of blackberries and small ripe red fruits, followed by light toasted notes. On the palate, it is rich and ripe, fresh and fleshy with fine and well-integrated tannins. The finish is long and fruity. It is the ideal wine for game birds (especially partridge) and hare stew.
