Cellar for up to 20 years. Decant for up to an hour before serving. Located in the legendary Châteauneuf-du-Pape appellation, Domaine Raymond Usseglio is a third-generation winery, currently under the leadership of Stéphane Usseglio. The estate sources its fruits from 18 hectares in Châteauneuf-du-Pape, and 5 hectares in Côtes du Rhône. Since 2015 the domaine has been a certified biodynamic farm, a transition that Stéphane oversaw himself. He employs a variety of methods in his wine-making. His preferred way of fermenting grapes is in concrete vats, but for “Les Apotres”, he has drawn inspiration from the past. This is a limited production cuveé, fermented and aged entirely in clay amphorae. “Les Apotres” is a stunning, maximalist red blend. Just like Jesus and his 12 Apostles, there are 13 grapes permitted for use in a Châteauneuf-du-Pape, and this wine includes them all. “Les Apotres” exhibits a deep well of aromas, wild black fruits mixed with rose petals and spicy elements of cardamom, pepper and graphite. It is complex and potent, with concentrated notes of red and black fruit on the tongue. You can get notes of liquorice and balsamic vinegar on the long, clear finish. Pair it with some rich beef dishes, anchovies, or a Moroccan chickpea tagine.
