The grapes to produce Falanghina del Sannio “Serrocielo” Feudi di San Gregorio were fermented in stainless steel tanks at controlled temperatures of between 16 to 18°C.
Following fermentation, the wine was rested in stainless steel vats for five to six months on its fine lees.
During this period, Falanghina del Sannio “Serrocielo” Feudi di San Gregorio underwent regular bâtonnage to enhance complexity and texture.
