More than 30 years on ageing on this rich sweet PX wine
The Pedro Ximenez grape, although a white grape, is treated differently as it is destined for sweet wines; the grapes and collected from the vine slightly later and they are then sundried in a process called soleo, where bunches are laid out on straw mats in the vineyard for up to two weeks; during this time the grapes lose about 40% of its volume due to evaporation, concentrating the sugars and flavours
The wine then spends around 30 years following the traditional Noe solera system
