La Chablisienne is a cooperative winery in Burgundy, founded over a century ago by winemakers from the Chablis wine region, under the leadership of Abbot Balitrand. Initially created to pool efforts to address the economic difficulties of the time, the cooperative has evolved in its production methods and operations, achieving great success and popularity, thanks to the production of stylish wines from premium parcels of the region. The Chardonnay grapes come from parcels located on the Premier Cru Vaulorent site on calcareous clay soils. As has become routine in the cooperative since the 1950s, the various members have total control over the winemaking processes, which guarantees a precise connection with the terroirs of origin and the quality of the wine. The Chablis 1er Cru Vaulorent has a bright color with pale golden tones and an elegant and broad aromatic profile with notes of ripe yellow fruit, sweet pineapple and some hints of wood. On the palate, it is a lively and fresh wine, round and smooth with a well-balanced acidity and a long finish that recalls some light toasted nuances. It makes an excellent pairing with grilled prawns or scallop risotto.
