The coarse, gravelly texture and generous soil depth encourage slow, even ripening. Winemaking The wine is made entirely from Cabernet Sauvignon and vinified parcel by parcel. Half of the barrels were new French oak, contributing depth, polish and gentle spice without overwhelming the fruit.
