Dark bright amber in appearance Sanchez Romate Amontillado NPU has an intense almond nose with hints of oaky spice and a touch of orange. The palate is lively for something so old with notes of almonds, walnuts and hazelnuts. . It comes with the vintage information as follows - Ageing: +30 years.
Essentially it starts life as a Fino which undergoes further ageing after the protective flor (yeast) layer has gone. The complex ageing results in one of the finest sherries
Drink either lightly chilled or at ambient temperature in a wine glass. Works well as an aperitif or with ,breadsticks, olives, anything marinated in vinegar.Please note that this is an old 'true' amontiallado and as such is not a medium-dry wine. A connoisseurs delight.
Sanchez Romate Amontillado NPU. Amontillado in the true sense is a very old fino. A dry elegant wine that develops complex nutty characterisitcs. NPU means Non Plus Ultra; literally 'nothing further beyond'. In a way a play on words suggesting that there is no better wine than this but at the same time referencing the ancient warning to sailors in this area; it was allegedly inscribed on the nearby Pillars of Hercules and ultimately proven fabulously wrong by Christopher Columbus.
